Banana Muffins with Phyto Protein Powder
Ingredients
- 125g Butter
- 185g Raw or Brown Sugar
- 1 cup Wholemeal Self Raising Flour
- ½ Pea Protein Powder
- 2 eggs
- 3 bananas - ripe
- 1 teaspoon vanilla
- 1 teaspoon bi-carb soda
- 1 teaspoon milk
Method
- Cream butter and sugar. Add eggs, beat together.
- Add mashed banana.
- Dissolve soda in vanilla & milk separately.
- Mix the Phyto Protein Powder in with the flour and add to the mixture alternating with the milk. Mix well.
- Pour into greased cake tin or muffin pan.
- Cook for 35 minutes. At 190° moderate oven.
Caramel Icing (optional)
- 1 cup brown sugar
- 1 desertspoon butter
- ¼ cup milk
Place everything in saucepan and stir until boiling. Simmer for 5 minutes without stirring. Beat until thick. Spread onto muffins or cake.
